Siopao with Sassy Sauce

Ingredients
- 2 cans Buttermilk Biscuits (10 Per Can)
- 2 cups Pre-cooked Pork, Rough Chopped
- 1 teaspoon Garlic Paste (or Fresh, Chopped Very Fine)
- 1 teaspoon (scant) Grated Fresh Ginger
- 1 Tablespoon Soy Sauce
- 1 teaspoon Hot Red Chili Sauce, to taste
- 1 Tablespoon Apricot Preserves
- 2 teaspoons Water
- 1 teaspoon Cornstarch
- 2 Tablespoons Olive Oil
- 1 teaspoon (scant) Sesame Oil
- 3 Tablespoons (heaping) Apricot Preserves
- 1 Tablespoon Soy Sauce
- 1 teaspoon Hot Red Chili Sauce, to taste

2Siopao Filling:

3Sautee grated ginger and garlic in olive and sesame oil over medium-low heat.

4Add pork, soy sauce, red chili sauce, and apricot preserves.

5Stir water and cornstarch together till you get a slurry, then add to the meat mixture.

6Stir often and cook over medium-low heat till everything is incorporated.

7Remove from heat and set aside to cool a bit.

8Siopao Assembly:

9Pop open the biscuit cans and seperate the raw biscuits.

10Take each biscuit and roll it out flat to about 1/8 inch thickness.

11Place about a tablespoon of the meat mixture in the center of the dough.

12Fold two opposite sides of the dough up over the mixture and pinch together.

13Then fold the remaining sides of the dough up over the top of the previous seam.

14Pinch together and twist to seal.
-
15Repeat for all biscuits.

16To cook:

17Take a large pot and boil about an inch of water in the bottom.

18Line a vegetable steamer basket with parchment paper.

19Place the raw siopao seam-side-down on the parchment paper.

20Place the siopao-laden steamer basket in the pot and close the lid.

21Allow to steam for about 20 minutes, checking for done-ness at after 17 minutes.

22Once done, remove from heat and serve with Sassy Sauce.

23Sassy Sauce:

24Add apricot preserves, soy sauce, and hot red chili sauce to a pot.

25Heat and stir over medium-low heat until fully incorporated.

26Pour into a bowl and dip your siopao.
