  • 3 c. peeled and sliced potatoes
  • 1 bag frozen corn
  • 1 medium onion, sliced thin
  • 1 lb. ground chuck
  • 1 c. sliced cleaned carrots
  • 1 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 qt. home-canned tomatoes or 1 (16 oz.) can tomatoes, cut up

Directions

    Brown meat in skillet and drain.

    Spray 3-quart casserole with Pam.

    Layer vegetables, except tomatoes, and meat, seasoning each layer.

    Pour tomatoes over all.

    Cover and bake 1 hour and 45 minutes at 350° or until tender.
