  • 2 cups self rising corn meal
  • 6 Tbsp self rising flour
  • 2 eggs lightly beaten
  • 1 1/2 cups milk
  • 2 Tbsp oil

Directions

    Preheat oven to 425F

    Sieve meal and flour. Add eggs and milk. Mix well but do not overmix.

    Heat oil in 10 inch skillet. Pour hot oil into mixture. Lightly dust skillet with corn meal. Pour mixture into skillet.

    Bake at 425 for 20 minutes until brown and crispy. Serve hot with butter.
