  • 1 (15 oz.) box raisin bran
  • 1 c. melted shortening
  • 3 c. sugar
  • 4 eggs, beaten
  • 1 qt. buttermilk
  • 5 c. flour
  • 5 tsp. baking soda
  • 2 tsp. salt

Directions

    Mix bran, sugar, flour, soda and salt in a large bowl.

    Add eggs, shortening and buttermilk.

    Mix well and refrigerate overnight.

    Batter may be stored covered in refrigerator up to 6 weeks.

    Fill greased muffin tins 2/3 full and bake at 400° for 15 to 20 minutes.
