  • 12 baby patty-pan squash
  • 1 lb. beef tenderloin
  • 1 large orange bell pepper
  • 12 small white mushrooms
  • 1/2 c. bottled Greek or Italian vinaigrette dressing
  • 1/4 tsp. kosher salt
  • 1/4 tsp. Freshly ground pepper

    Blanch squash in salted, boiling water for 3 minutes.

    Drain and rinse under cold water; pat dry.

    In a large bowl, mix squash, beef, bell pepper, mushrooms, and dressing.

    Thread onto 4 (12-inch) metal skewers.
