- 12 slices turkey bacon
- 1 medium potato, cut into small cubes
- 2 green onions, with tops sliced
- 1/2 tsp. chili powder
- 4 eggs, mixed together with 2 Tbsp. water
Directions

1Place potatoes and turkey bacon in skillet (nonstick).

2Cover and cook over medium heat, about 12 minutes, stirring often until potatoes are fork-tender.

3Stir in onion and chili powder.

4Pour eggs over and cover.

5Reduce heat to low and cook 5 minutes or until set.

6Cut and serve.
