- 3 oz. corn meal
- 1 tsp. double-acting baking powder
- 1/4 tsp. salt
- 1 Tbsp. plus 1 tsp. reduced-calorie margarine
- 1/2 c. plain low-fat yogurt
- 2 eggs, slightly beaten
- 2 oz. grated Cheddar cheese
- 2 tsp. vegetable oil
Directions

1Preheat oven to 400°.

2In medium bowl combine corn meal, baking powder and salt.

3Add the margarine, yogurt, eggs and cheese.

4Stir until blended.

5Heat oil in a large cast-iron skillet over medium heat.

6Pour the hot oil into corn meal mixture.

7Stir until combined.

8Pour mixture into skillet.

9Bake 20 minutes until lightly browned.
