- 2 Tbsp. olive oil or oil
- 2 Tbsp. flour
- 1 tsp. salt
- 3/4 tsp. dried rosemary leaves, crushed
- 1/2 tsp. pepper
- 1 Tbsp. lemon juice
- 2 medium onions, sliced 1/2-inch thick
- 4 large chicken thighs (1 1/2 lb.)
- 1/2 lb. small red potatoes
- small bunch fresh spinach
- 1/4 c. pitted ripe olives, sliced in half
Directions

1In a 10-inch skillet over medium-high heat, cook onions in oil until golden.

2Remove with slotted spoon to bowl.

3On sheet of waxed paper, mix flour, salt, dried rosemary and pepper to coat chicken thighs.

4In remaining oil in skillet over medium-high heat, cook chicken until golden brown on all sides.
