- 3 eggs
- 3/4 c. sugar
- 1 1/2 c. sifted all-purpose flour
- 1 c. cornmeal
- 2 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 c. buttermilk
- 1/3 c. melted butter
- 1 tsp. butter
Directions

1Beat eggs with sugar until blended.

2Sift together flour, cornmeal, baking powder, baking soda and salt.

3Add dry ingredients alternately with the buttermilk to the egg-sugar mixture.

4Stir thoroughly after each addition.

5Stir in melted butter.

6Melt the 1 teaspoon butter in a 9-inch cast-iron skillet and thoroughly coat sides.

7Pour batter into the warm skillet.

8Bake at 400° for 30 minutes or until top just begins to brown.

9Serve warm in wedges from the skillet.

10Makes 1 corn bread, 12 servings.
