- 1/3 c. margarine
- 1 1/4 c. corn meal
- 3/4 c. flour
- 1 Tbsp. baking powder
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 1 egg, slightly beaten
- 1 c. milk
Directions

1Melt margarine in heavy 9-inch ovenproof skillet, preferably cast-iron, in oven while preheating to 400°.

2In large bowl, mix corn meal, flour, baking powder, sugar and salt; stir in egg and milk.

3Carefully tilt skillet to coat with margarine and pour the rest into corn meal mixture.

4Stir just to blend.

5Pour into hot skillet; bake about 20 minutes or until golden and springy to the touch.

6Cut in 8 wedges; serve hot.
