Tex-Mex Stuffed Potatoes

- 6 large baking potatoes
- 1/2 lb. lean ground beef
- 1 onion, chopped
- 1 garlic clove, minced
- 1 (16 oz.) refried beans
- 1 (8 oz.) Mexican salsa
- dash of pepper
- 8 oz. sour cream
- 2 Tbsp. chopped green onions
- 2 Tbsp. chopped tomatoes
- corn or tortilla chips (for garnish)
Directions

1Bake potatoes at 400° for 1 hour. In a medium saucepan, brown beef, onion and garlic. Drain fat. Add beans, salsa and pepper. Simmer, stirring occasionally, 40 minutes or until thickened. Cut an X in top of each potato. Fluff potato with fork and spoon beef mixture over each potato. Garnish with sour cream. Sprinkle with green onion and tomato. Serve with chips.
