Tex-Mex Stuffed Potatoes

  • 6 large baking potatoes
  • 1/2 lb. lean ground beef
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 (16 oz.) refried beans
  • 1 (8 oz.) Mexican salsa
  • dash of pepper
  • 8 oz. sour cream
  • 2 Tbsp. chopped green onions
  • 2 Tbsp. chopped tomatoes
  • corn or tortilla chips (for garnish)

Directions

    Bake potatoes at 400° for 1 hour. In a medium saucepan, brown beef, onion and garlic. Drain fat. Add beans, salsa and pepper. Simmer, stirring occasionally, 40 minutes or until thickened. Cut an X in top of each potato. Fluff potato with fork and spoon beef mixture over each potato. Garnish with sour cream. Sprinkle with green onion and tomato. Serve with chips.
