- 2 strips bacon
- 1 large egg
- 2 c. buttermilk
- 1 3/4 c. cornmeal
- 1 scant tsp. baking soda
- 1 scant tsp. baking powder
- 1 scant tsp. salt
Directions

1Preheat oven to 450°.

2Brown bacon in a cast-iron skillet. Leave 2 teaspoons of bacon grease in skillet and put it in the oven as it preheats.

3Mix eggs, buttermilk and cornmeal to form a thin batter.

4Add baking soda, baking powder and salt.

5Pour batter into hot skillet.

6Return skillet to oven and bake for 15 to 20 minutes until cornbread begins to brown on top.

7Turn out of the loaf by inverting the skillet over a large plate and serve hot.
