- 1 eggplant
- 1 medium onion, chopped
- 4 Tbsp. margarine
- 3 medium tomatoes, thinly sliced
- 1 1/2 tsp. salt
- 1 tsp. oregano
- 1/4 tsp. pepper
- 1/2 c. sour cream
- 2 Tbsp. chopped parsley
Directions

1Peel eggplant and cut into 1-inch cubes.

2Saute eggplant and onion in butter or margarine in large frying pan for 10 minutes or until barely tender.

3Stir in tomatoes, salt, oregano and pepper; cover.

4Cook slowly over medium heat for 10 minutes or until vegetables are tender.

5Remove from heat.

6Stir in sour cream and parsley.

7Yields 6 servings.
