  • 1 lb. ground beef
  • 1/2 c. onion, chopped
  • 2 Tbsp. canned green chilies
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1 (10 3/4 oz.) can enchilada sauce
  • 1/3 c. milk
  • 1/4 c. cooking oil
  • 8 corn tortillas
  • 2 1/2 c. American cheese, shredded
  • 1/2 c. ripe olives, pitted and chopped

Directions

    Brown ground beef and chopped onion in a large skillet.

    Mince chilies while mixture is browning.

    Drain fat from skillet.

    Stir in chilies, soup, enchilada sauce and milk.

    Bring to a boil. Reduce heat.

    Cover and simmer 20 minutes, stirring occasionally.
