  • 3 tablespoons vegetable oil
  • 2 dozen shucked large raw oysters, drained
  • 2 eggs, beaten
  • 3 cups cracker crumbs
  • 3/4 to 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Snipped parsley or paprika
  • Lemon wedges

    Heat the butter and oil in a skillet.

    Roll the oysters in the egg and crackers crumbs and sprinkle with salt and pepper.
