- 2 dozen shucked large raw oysters, drained
- 2 eggs, beaten
- 3 cups cracker crumbs
- 3/4 to 1 teaspoon salt
- 1/4 teaspoon pepper
- Snipped parsley or paprika
- Lemon wedges

1Heat the butter and oil in a skillet.

2Roll the oysters in the egg and crackers crumbs and sprinkle with salt and pepper.
