  • 1 lb. ground beef
  • 1 c. Ricotta or cottage cheese
  • 2 eggs
  • 1 c. Parmesan or Romano cheese, divided
  • 1/2 tsp. crushed oregano
  • salt and pepper
  • 1 (15 1/2 oz.) can spaghetti sauce
  • 1 1/2 to 1 3/4 c. water
  • 2 Tbsp. parsley flakes
  • 6 to 8 lasagna noodles, uncooked
  • 8 oz. Mozzarella cheese, grated

    Mix together beef, cottage cheese, eggs, 1/2 cup Parmesan, oregano, salt and pepper.

    Set aside.

    Combine spaghetti sauce, water and parsley.

    Spread 1/3 spaghetti sauce in bottom of a 10-inch skillet.

    Place 3/4 lasagna noodles over the sauce, breaking to fit flat.

    Spread half the filling over the noodles. Sprinkle with half of the remaining Parmesan cheese.

    Place half of the Mozzarella over the Parmesan.

    Spoon 1/3 of the spaghetti sauce over the cheese.

    Repeat layers, ending with sauce.

    Cover skillet and cook on low about 45 minutes or until noodles are tender.

    Let stand 10 minutes before serving.
