Ingredients
- 1 lb. fresh, raw spinach
- 1 Tbsp. bacon grease
- 1 c. cooked pork or ham, chopped (optional)
- 1 tsp. vinegar
- 1 egg, beaten
- 1/2 c. half and half
- 1 scallion, chopped
- salt and freshly ground black pepper to taste
Directions

1Rinse spinach thoroughly and trim stems.

2If leaves are very large, tear in half.

3Shake to dry.

4In a very large skillet, heat bacon grease on medium-high heat, then add pork or ham and brown slightly.

5Turn heat to low and add vinegar.

6Mix egg with half and half and stir into skillet.

7Add spinach, a skilletful at a time, letting it cook down while stirring until more can be added. Continue until all the spinach is used.

8Sprinkle scallion over top and stir until last batch of spinach is wilted.

9Salt and pepper to taste and serve immediately.
