  • 1 pkg. unflavored gelatin
  • 1/8 c. water
  • 1/2 c. boiling water
  • 1/3 c. Alba (dry milk powder)
  • 2/3 c. Ricotta or cottage cheese
  • 1/4 c. sugar twin or 3 pkg. sweetener
  • 1/2 tsp. lemon extract
  • 5 to 6 ice cubes
  • 1/2 c. chilled pineapple, sugarless

    Soften gelatin in cold water; add boiling water.

    Stir in blender a few seconds; add Alba and cheese; stir.

    Add sweetener and extract; blend together.

    Add 5 to 6 ice cubes one at a time at high speed.

    Pour into pie pan and freeze 5 minutes.

    Spread with chilled, crushed, sugarless pineapple.
