- 1/2 c. honey
- 1/2 c. sweet white wine
- 5 egg yolks
- 7 egg whites
- 1 1/2 tsp. salt
- 1 Tbsp. grated orange peel
- 1/2 c. plus 2 Tbsp. olive oil
- 1 c. whole-wheat flour
Directions

1Preheat oven to 375°.

2Whisk egg yolks with honey for 5 minutes.

3Add orange peel.

4Sift whole-wheat flour with salt. Gradually stir in egg and honey.

5Add wine and olive oil, stirring constantly, as small amounts are added.

6Beat the egg whites until stiff and fold into batter.

7Line the bottom of an 8-inch spring-form pan with oiled parchment or a brown paper shopping bag.

8Oil the pan and paper well.

9Pour in batter and bake for 20 minutes.

10Turn oven off and let cake sit for 10 minutes.

11Remove cake from oven.

12Turn over and detach from spring pan carefully.
