Sliced Baked Potatoes

  • 4 medium-large potatoes
  • chopped herbs (scallions, parsley, chives, thyme or sage)
  • dried herbs (if fresh is unavailable)
  • grated cheese (Cheddar or Parmesan)
  • melted butter

Directions

    Wash potatoes and peel if skin is thick or tough.

    Put potatoes into thin slices but not all the way through.

    Use a handle of a spoon to prevent knife from cutting all the way.

    Put potatoes into a baking dish.

    Fan them slightly.

    Drizzle with butter.

    Sprinkle with herbs.

    Bake at 425° for about 50 minutes. Remove from oven and sprinkle with cheese.

    Bake another 10 to 15 minutes until lightly browned.
