- 4 medium-large potatoes
- chopped herbs (scallions, parsley, chives, thyme or sage)
- dried herbs (if fresh is unavailable)
- grated cheese (Cheddar or Parmesan)
- melted butter
Directions

1Wash potatoes and peel if skin is thick or tough.

2Put potatoes into thin slices but not all the way through.

3Use a handle of a spoon to prevent knife from cutting all the way.

4Put potatoes into a baking dish.

5Fan them slightly.

6Drizzle with butter.

7Sprinkle with herbs.

8Bake at 425° for about 50 minutes. Remove from oven and sprinkle with cheese.

9Bake another 10 to 15 minutes until lightly browned.
