- 2 lb. beef stew meat
- 1 medium onion
- 1 stalk celery
- 6 carrots
- 2 tsp. salt
- 1 Tbsp. sugar
- 2 Tbsp. instant tapioca
- 1/2 c. tomato juice or low sodium V-8 vegetable juice
- 1 pkg. frozen stew vegetables (can use a second pkg. if desired)
Directions

1Place 2 pounds beef stew meat, cut into 1 1/4-inch cubes, in a pan 11 x 7 x 1 1/2-inches.

2Peel and slice 1 medium onion. Diagonally slice 1 stalk of celery.

3Pare 6 carrots and cut into chunks.

4Add vegetables to the baking pan.
