Smashed Potatoes

Ingredients

  • 2 pounds New potatoes
  • 1 stick Unsalted butter, melted
  • 1/2 cup Milk
  • 1 cup Cheese (bluo or other), optional
  • some Chives or green onions, coarsley chopped
  • 0 Salt and pepper, to taste
  • 2 heads Garlic
  • 1 tablespoon Olive oil

    Pre-heat oven to 200 degrees F/93.3 Celsius

    Wash garlic heads and cut off one end.

    Add olive oil, salt, and pepper

    Wrap in foil
  5. 5
    Roast for 45 minutes

    Quarter potatoes (skins optional) and put in a pot of cold water

    Bring to a boil and then boil for 15 minutes.

    Drain potatoes and place back in pot

    Smash coarsely so that there are still some chunks (or mash until smooth).

    Add butter, milk, and cheese.

    Add skinned garlic and chives/green onions
