- 2 pounds New potatoes
- 1 stick Unsalted butter, melted
- 1/2 cup Milk
- 1 cup Cheese (bluo or other), optional
- some Chives or green onions, coarsley chopped
- 0 Salt and pepper, to taste
- 2 heads Garlic
- 1 tablespoon Olive oil
Directions

1Pre-heat oven to 200 degrees F/93.3 Celsius

2Wash garlic heads and cut off one end.

3Add olive oil, salt, and pepper

4Wrap in foil

5Roast for 45 minutes

6Quarter potatoes (skins optional) and put in a pot of cold water

7Bring to a boil and then boil for 15 minutes.

8Drain potatoes and place back in pot

9Smash coarsely so that there are still some chunks (or mash until smooth).

10Add butter, milk, and cheese.

11Add skinned garlic and chives/green onions
