Bulgur-Pine Nut Pilaf

- 2 tablespoons extra virgin olive oil
- 1/2 cup bulgur
- 1/4 cup pine nuts
- 1/2 cup boiling water
- 1 tablespoon freshly squeezed lemon juice
- Pinch of salt
- 1 teaspoon minced fresh dill
- 1 to 2 tablespoons finely minced chives or scallion
- 1 tablespoon currants (optional)
Directions

1Heat 1 tablespoon of the oil in a medium-small skillet with a tight-fitting lid.

2Add the uncooked bulgur and the pine nuts, and saute over medium heat for about 5 minutes, or until it gives off a toasty smell.

3Keep stirring during this process to be sure the bulgur doesnt burn.

4Pour in the water and place the lid on the pan.

5Let stand 30 minutes.

6Stir in the second tablespoon of olive oil and the lemon juice, and add a little salt to taste.

7Stir in the remaining ingredients, and serve warm or at room temperature.
