Smashed Potatoes With Stir-Ins

- 2 pounds (4 cups) medium red potatoes, washed, cut into quarters
- 1 1/2 teaspoons salt
- Water
- 1 cup Land O Lakes Fat Free Half & Half
- 1 Half Stick (1/4 cup) Land O Lakes Butter, cut into 4 pieces
- 1/4 cup sour cream
- Pepper, if desired
Directions

1Place potatoes and 1 teaspoon salt in 3-quart saucepan; cover with water.

2Cook over high heat until water comes to a boil; reduce heat to medium.

3Cook 15-20 minutes or until potatoes are tender.

4Drain potatoes; return to saucepan.

5Heat half & half in 1-quart saucepan over medium-low heat just until warm.

6Add butter to potatoes; mash potatoes until about two-thirds are mashed and one-third remain lumpy.

7Gradually add half & half to potato mixture; mix well.

8Stir in sour cream and remaining 1/2 teaspoon salt; add pepper, if desired.

9Serve immediately.
