- 1/4 cup minced fresh parsley
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions

1Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat to medium. Cook, uncovered, for 15-20 minutes or until tender.
