- 8 lb untrimmed brisket
- 5 lb wood chips
- 5 tbsp paprika
- 4 tbsp garlic salt
- 2 tbsp onion powder
- 1 tbsp ground black pepper
- 1 tbsp dried parsley
- 2 tsp cayenne pepper
- 2 tsp ground cumin
- 1 tsp coriander
- 1 tsp dried oregano
- 1/4 tsp hot chilli powder
Directions

1Mix paprika, salt, garlic salt, onion powder, black pepper, dried parsley, cayenne pepper, ground cummin, ground coriander, oregano and chilli powder in bowl.

2Coat brisket with seasoning mixture

3Keep smoker between 225 and 250

4Smoke meat for 8 to 10 hours.

5Internal temp should reach 170.

6Remove from smoker.

7Wrap meat in tin foil.

8Put back in smoker.

9Keep in smoker til reaches 190.
