Ingredients

  • 8 lb untrimmed brisket
  • 5 lb wood chips
  • 5 tbsp paprika
  • 4 tbsp garlic salt
  • 2 tbsp onion powder
  • 1 tbsp ground black pepper
  • 1 tbsp dried parsley
  • 2 tsp cayenne pepper
  • 2 tsp ground cumin
  • 1 tsp coriander
  • 1 tsp dried oregano
  • 1/4 tsp hot chilli powder

Directions

    Mix paprika, salt, garlic salt, onion powder, black pepper, dried parsley, cayenne pepper, ground cummin, ground coriander, oregano and chilli powder in bowl.

    Coat brisket with seasoning mixture

    Keep smoker between 225 and 250
  4. 4
    Smoke meat for 8 to 10 hours.

    Internal temp should reach 170.

    Remove from smoker.

    Wrap meat in tin foil.

    Put back in smoker.

    Keep in smoker til reaches 190.
