  • 4 Cornish hens
  • 2 grape fruits
  • 2 oranges
  • 3 lemons
  • 1/2 cup Maples syrup
  • 2 tbsp smoked paprika
  • 1 tsp salt
  • 1 tbsp garlic powder
  • 1 tsp ground black pepper
  • 1/4 cup olive oil
  • 1 cup apple wood chips

Directions

    Add all citrus(cut in half) and molasses to large bucket or pot for brine.

    Brine over night or for at least 8 hours.

    Feel with water until hens are fully submerged
  4. 4
    Pull hens from brine pat dry and brush with olive oil
  5. 5
    Combine dry season and season both sides of hens.

    Add hens to a grill.

    Keep temp around 225 for 2 and half hours.

    Add Applewood or fruit wood of choice for best smoke flavor.
