- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 1/4 cups milk
- 2 hard boiled eggs chopped
- 12 1/2 ounces smoked haddock fillet skin removed, chopped
- 3 tablespoons flat leaf parsley leaves fresh, chopped
- 13 1/4 ounces puff pastry cut into 4 squares
- 1 egg beaten
Directions

1Preheat oven to 400°F.

2Heat butter, flour and milk in a small pan, stirring continuously, until sauce thickens and boils. Remove from heat. Add eggs, smoked haddock and parsley. Season.

3Spoon fish mixture into center of squares. Brush edges with water then fold each corner over filling into center and pinch together to seal. Place on a lightly greased baking sheet and brush with beaten egg. Bake for 30 mins, until golden. Serve hot.
