- 1 tablespoon simply asia spicy szechwan five mixed spice
- 1 -180 cu. inch bag of pecan and cherry soking chips
- 2 - bag of kinsford charcoal
Directions

1Rinse and pat dry chicken.

2Sprinkle chicken with spicy Simply Asia Szechwan five spice, make sure you get under skin.

3let sit to room temperature.

4prepare smoker for 225 degree temperature, make sure its 225 for 20 minutes.

5Use a drip tray with water ( I used apple juice) to help keep moist.

6Place chicken in smoker and maintain 225 to 240 degrees throughout smoking process.

7I used a remote instant read thermometer to monitor temp., when it reached 165 degrees I wrapped them up in heavy duty aluminum foil and let them rest for 30 minutes.
