Microwave Peanut Brittle

Ingredients

  • 1-1/2 cups (350 ml) dry roasted peanuts
  • 1 cup (225 ml) white sugar
  • 1/2 cup (125 ml) light corn syrup
  • pinch salt
  • 1 tbsp (15 ml) butter
  • 1 tsp (5 ml) vanilla
  • 1 tsp (5 ml) baking soda

    Grease cookie sheet.

    In microwave safe bowl, mix peanuts, sugar, corn syrup and salt.

    Cook in microwave for 6 to 7 minutes on high, mixture should be bubbly and peanuts browned.

    Stir in butter and cook 2 to 3 minutes more.

    Quickly stir in baking soda, just til it is foamy.

    Pour immediatley on cookie sheet.

    Let cool 15 minutes, til set.

    Break into pieces.

    Store in an airtight container.
