Microwave Peanut Brittle

Ingredients
- 1-1/2 cups (350 ml) dry roasted peanuts
- 1 cup (225 ml) white sugar
- 1/2 cup (125 ml) light corn syrup
- pinch salt
- 1 tbsp (15 ml) butter
- 1 tsp (5 ml) vanilla
- 1 tsp (5 ml) baking soda
Directions

1Grease cookie sheet.

2In microwave safe bowl, mix peanuts, sugar, corn syrup and salt.

3Cook in microwave for 6 to 7 minutes on high, mixture should be bubbly and peanuts browned.

4Stir in butter and cook 2 to 3 minutes more.

5Quickly stir in baking soda, just til it is foamy.

6Pour immediatley on cookie sheet.

7Let cool 15 minutes, til set.

8Break into pieces.

9Store in an airtight container.
