- Wood Chips
- 3 cups All-purpose Flour
- 1 cup Smoked Flour
- 2 Tablespoons Cornstarch
- 1 Tablespoon Vital Wheat Gluten
- 1/2 cups Water
Directions

1Soak a handful of wood chips for 30 minutes in water.

2Preheat the oven to 350 degrees F. Place the wood chips on a rimmed baking sheet and place it on the bottom shelf of the oven.

3Place the flour on a sheet of parchment paper on a pizza pan.

4Smoke the flour for 1 hour.

5Let cool before using.

6Combine 1 cup of the smoked flour with the cornstarch and wheat gluten.

7The rest of the flour can be reserved for more pasta, for cookies or for other applications.

8Add the water and incorporate thoroughly.

9Knead the dough for about 5 minutes, or until smooth.

10Use a pasta maker to roll out the pasta dough and cut to your desired thickness.
