Ingredients
- 1 medium chicken, cut into 4 pieces and skinned (2 leg and thighs and 2 half-breast pieces; save back and wings for stock)
- 1/4 c. safflower oil
- 1 large onion, sliced
- 2 cloves garlic, minced
- black pepper to taste
- 1/2 tsp. crushed thyme
- approximately 2 c. water
- 1 1/2 c. sliced carrots
- 1 1/2 c. fresh green peas (preferably fresh)
Directions

1In deep saucepan or Dutch oven, brown chicken parts in oil. Pour off excess oil; add onion, garlic and spices.

2Cover chicken with water.

3Cover pot and bring to a boil, then lower heat and simmer for approximately 2 1/2 to 3 hours.

4Add carrots and peas. Cover pot; bring back to a boil.

5Then lower the heat and simmer for another 20 to 30 minutes.

6Makes 4 servings.
