Smothered Chicken

Ingredients

  • 1 medium chicken, cut into 4 pieces and skinned (2 leg and thighs and 2 half-breast pieces; save back and wings for stock)
  • 1/4 c. safflower oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • black pepper to taste
  • 1/2 tsp. crushed thyme
  • approximately 2 c. water
  • 1 1/2 c. sliced carrots
  • 1 1/2 c. fresh green peas (preferably fresh)

Directions

    In deep saucepan or Dutch oven, brown chicken parts in oil. Pour off excess oil; add onion, garlic and spices.

    Cover chicken with water.

    Cover pot and bring to a boil, then lower heat and simmer for approximately 2 1/2 to 3 hours.

    Add carrots and peas. Cover pot; bring back to a boil.

    Then lower the heat and simmer for another 20 to 30 minutes.

    Makes 4 servings.
