Smothered Fried Cabbage

Ingredients
- 1 large green cabbage
- 4 slices fat back, scored almost to the rind or bacon
- salt to taste
- 2 Tbsp. butter
- 1/2 tsp. black pepper
- 1 medium onion, chopped
- dash of cayenne pepper or crushed red pepper flakes
- 1 lb. smoked ham
Directions

1Discard outer leaves of cabbage.

2Cut cabbage coarsely; wash and drain.

3Fry fat back in a heavy skillet over medium heat until crisp.

4Remove fat back.

5There should be enough fat in your skillet to fry cabbage; if not, add butter.

6Turn heat up; put cabbage in skillet.

7Cover; lower heat and steam (5 minutes). Remove lid and season with salt, pepper and other ingredients, including the ham.

8Replace lid and cook additional 10 minutes.
