- 1 large onion, chopped
- 1/2 c. chopped green pepper
- 2 Tbsp. butter
- 2 c. sliced okra or 10 oz. frozen okra
- 2 medium tomatoes, peeled and chopped
- 1/4 tsp. salt
- 1/4 tsp. ground red pepper
- 1/8 tsp. black pepper
Directions

1In a skillet, cook onion and green pepper in butter for about 5 minutes.

2Stir in okra, tomatoes, salt, red pepper and black pepper.

3Bring to boil.

4Reduce heat.

5Cover and simmer for 30 to 35 minutes for fresh okra, 15 minutes for frozen okra or until okra is tender.

6Makes 6 servings.
