Smothered Quail

- 2 (4 to 6 oz.) ready to cook quail
- salt and pepper (if desired)
- 1/4 c. butter
- 1/2 c. chopped onions
- 1/2 c. light cream
- 1 tsp. cornstarch
Directions

1Split quail in halves lengthwise and brown in skillet in 1/4 cup butter.

2Season with salt and pepper. Top with onions and add light cream. Cover and simmer about 30 minutes. Remove quail to a warm platter. Blend 2 tablespoons cold water into cornstarch. Add to pan drippings. Simmer and stir until thick and bubbly.

3Pour gravy over quail.
