- 3 Tbsp. butter
- 1 medium onion, chopped fine
- 1/2 lb. fresh mushrooms, sliced
- 3 Tbsp. butter
- 1 Tbsp. oil
- 12 quail breasts
- 1 c. light cream
- 1/2 c. dry white wine
- 1 can cream of mushroom soup
Directions

1Melt 3 tablespoons butter and saute onion and mushrooms until tender.

2Remove from pan.

3Melt 3 tablespoons butter and oil; saute birds until brown.

4Remove from pan; pour off remaining fat. Add wine; scrape up particles on bottom of skillet.

5Add soup, onion, mushrooms and cream; stir until well blended.

6Return birds, spooning sauce over.

7Cover and simmer for 30 minutes.
