  • 2 c. cooked turtle meat
  • 6 hard-cooked egg yolks
  • 2 Tbsp. butter
  • 2 c. cream
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • dash of allspice
  • dash of nutmeg

Directions

    Cut the head off as close to the jaw as possible and let it bleed well.

    (Tie it with rope by back leg and hang it up.)

    Put the whole turtle in scalding water (shell and all) for about 5 to 10 minutes.

    Remove turtle and scrub well with a good stiff brush. Pull toenails and cut shell away with a very sharp knife.

    Don't forget to get all that white meat from back of shell.

    Remove internal organs.

    Parboil until meat is tender.

    Remove meat and skin it.

    Use the broth for stew or soup.
