- 3 (10 oz.) pkg. chopped frozen spinach
- 1/2 onion, chopped
- 2 Tbsp. butter
- 2 Tbsp. all-purpose flour
- 1 c. milk
- 1 (9 oz.) stick hot pepper cheese, cubed
- 1/2 c. cracker crumbs
- 3 Tbsp. grated Parmesan cheese
Directions

1Preheat oven to 350°.

2Cook spinach 3 minutes and drain well. Set aside.

3Saute onion in butter.

4Stir in flour and add milk to make cream sauce.

5Add hot pepper cheese and stir until melted. Combine cheese sauce and spinach.

6Pour into 1 1/2 or 2-quart ovenproof dish.

7Top with crumbs and Parmesan cheese.

8Bake 20 minutes or 30 minutes, if refrigerated.
