Snappy Spinach Casserole

  • 3 (10 oz.) pkg. chopped frozen spinach
  • 1/2 onion, chopped
  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1 c. milk
  • 1 (9 oz.) stick hot pepper cheese, cubed
  • 1/2 c. cracker crumbs
  • 3 Tbsp. grated Parmesan cheese

Directions

    Preheat oven to 350°.

    Cook spinach 3 minutes and drain well. Set aside.

    Saute onion in butter.

    Stir in flour and add milk to make cream sauce.

    Add hot pepper cheese and stir until melted. Combine cheese sauce and spinach.

    Pour into 1 1/2 or 2-quart ovenproof dish.

    Top with crumbs and Parmesan cheese.

    Bake 20 minutes or 30 minutes, if refrigerated.
