Ingredients
- 2 c. squash, cut into chunks (do not peel; mix zucchini and yellow for color)
- 1/2 c. onion chunks
- 1/2 c. green pepper chunks
- 1 1/2 c. smoked sausage (Hillshire), cut into 1/4-inch rounds
- 1/2 tsp. garlic salt
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. oregano flakes
- 2 Tbsp. margarine
- 2 c. diced potatoes
- 2 medium tomatoes, peeled, seeded, chopped
Directions

1Melt margarine in saute pan or skillet.

2Add all ingredients except potatoes and tomatoes.

3Boil diced potato while squash simmers.

4Turn squash frequently after 7 or 8 minutes.

5Drain potatoes and add with tomatoes to squash mixture.

6Mix together and simmer 2 or 3 minutes to blend flavors.

7Serve immediately as single dish meal with heated garlic or French bread.

8(Cornbread ain't bad either.)
