Snooty Squash

Ingredients

  • 2 c. squash, cut into chunks (do not peel; mix zucchini and yellow for color)
  • 1/2 c. onion chunks
  • 1/2 c. green pepper chunks
  • 1 1/2 c. smoked sausage (Hillshire), cut into 1/4-inch rounds
  • 1/2 tsp. garlic salt
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. oregano flakes
  • 2 Tbsp. margarine
  • 2 c. diced potatoes
  • 2 medium tomatoes, peeled, seeded, chopped

Directions

    Melt margarine in saute pan or skillet.

    Add all ingredients except potatoes and tomatoes.

    Boil diced potato while squash simmers.

    Turn squash frequently after 7 or 8 minutes.

    Drain potatoes and add with tomatoes to squash mixture.

    Mix together and simmer 2 or 3 minutes to blend flavors.

    Serve immediately as single dish meal with heated garlic or French bread.

    (Cornbread ain't bad either.)
