Ingredients
- 1 cup white sugar
- 1 envelope (1 tablespoon) unflavored gelatin
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1 teaspoon vanilla extract
- 1 1/3 cups flaked coconut
- 2 cups heavy cream
- 1 (10 ounce) package frozen raspberries, thawed
- 1 tablespoon cold water
- 2 teaspoons cornstarch
Directions

1In a medium saucepan, stir together the sugar, gelatin and salt.

2Mix in the milk.

3Cook over medium heat until gelatin is dissolved and clear.

4Remove from heat and chill until partially set.

5Stir once and add vanilla.

6Fold in the coconut and heavy cream.

7Pour into a pudding mold.

8Chill until firm, about 4 hours.

9To make raspberry sauce: Pour raspberries with juice, into a medium saucepan.

10Cook over medium heat until boiling.

11Mix together water and cornstarch; stir into the raspberries.

12Boil rapidly for one minute, stirring constantly.

13Cool before serving with pudding.
