Ingredients

  • 1/2 c. butter
  • 1 c. sugar
  • 2 egg yolks, beaten
  • 1 c. crushed pineapple, drained well
  • 1 c. nut meats, chopped
  • 2 egg whites, well beaten
  • 1 pt. whipped cream
  • vanilla wafers
  • coconut

Directions

    Cream butter and sugar.

    Add egg yolks, pineapple and nuts; blend well, then fold in egg whites.

    Use vanilla wafers as base; spread with mixture (thick).

    Add wafers and repeat.

    Use 3 wafers for each ball.

    Place in refrigerator for several hours (12) before serving.

    Cover completely with whipped cream.

    Sprinkle over coconut (I add a cherry on top).
