  • 4 oz. cream cheese, softened
  • 1/2 c. powdered sugar
  • 1/4 c. milk
  • 3 1/2 c. thawed Cool Whip nondairy whipped topping
  • 24 prepared unfrosted cupcakes
  • 3 pkg. (7 oz. each) Baker's Angel Flake coconut (about 8 c.)
  • 2 sq. Baker's semi-sweet chocolate, melted (optional)
  • 60 maraschino cherries with stems
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. light corn syrup
  • 1/4 tsp. salt
  • 2 c. sifted powdered sugar
  • 1 1/2 lb. dipping chocolate

    Advance preparation:

    Drain cherries well; let stand on paper toweling.

    Combine butter or margarine, corn syrup and salt; stir in powdered sugar to make fondant.

    Knead until smooth.

    Chill. Shape about 1 teaspoon fondant mixture around each cherry.

    Place on baking sheet lined with waxed paper; chill.
