  • 1 box vanilla wafers
  • 1 stick butter, softened
  • 1 c. sugar
  • 1 (20 oz.) can crushed pineapple, drained
  • 1 c. nuts, chopped
  • 1 Cool Whip
  • coconut

Directions

    Cream together butter and sugar.

    Add pineapple and nuts.

    On flat side of vanilla wafer, add 1 teaspoon pineapple mixture. Cover with another wafer.

    Ice with Cool Whip.

    Roll in coconut. Place in cupcake paper.

    Refrigerate after all cookies are iced.
