Soaked Bread Pudding

  • 8 slices white bread, crusts removed
  • 3/4 cup dried mixed fruit
  • 60 g butter
  • 1/2 cup orange marmalade
  • 1 egg
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1/2 cup cold milk

Directions

    Break bread into small pieces.

    Place in a bowl and cover with cold water.

    Soak 30 minutes, drain well, squeeze moisture from bread.

    Place dried fruit, butter, marmalade, egg, nutmeg and vanilla in a bowl.

    Add bread, mix well.

    Blend in enough milk to make a stick consistency.

    Pour into greased 18 cm square tin.

    Bake in moderate oven 180 C for 1 hour or till firm.

    Rest in tin for 10 minutes then turn out.

    Delicious hot or cold.
