Ingredients

  • 4 lb. clear, strained grease, heated (no particular temperature, just melted)
  • 1 1/2 qt. water
  • 1 can lye
  • 1 large enamel pan
  • wooden spoon or paddle
  • glass jar
  • 2 c. coarse salt
  • 1 c. brown sugar
  • 2 Tbsp. black pepper
  • 1 Tbsp. red pepper
  • 1 ham (from 200 lb. hog)

Directions

    Mix salt, sugar and peppers well.

    Lay ham on piece of brown wrapping paper large enough to wrap ham.

    Rub ham with small amounts of mixture until it begins to melt.

    Lift ham; cover paper under ham with thin coat of mixture.

    Lay it, skin side down, on paper.
  6. 6
    Pack remaining mixture on cut side and as much as possible under skin and around the knee joint.
