Soft Apple Cider Cookies

- 1 cup firmly packed lt. brown sugar
- 1/2 cup margarine, softened
- 1/2 cup apple cider
- 1/2 cup egg beaters
- 2 1/4 cup all-purpose flour
- 1 1/2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 medium apples, peeled and diced
- 3/4 cup almonds or pecans
Directions

1In large bowl, with electric mixer at medium speed, beat sugar and margarine until creamy.

2Add cider and eggbeaters, beat until smooth.

3At low speed gradually blend flour, cinnamon, baking soda and salt.

4Stir in apples and nuts.

5Drop by spoonful 2 inches apart onto greased bakery sheet.

6Bake 375 degrees for 10 to 12 minutes or until golden brown.

7Remove from sheet.

8Cool on wire rack.
