- 1 c. yellow cornmeal
- 2 tsp. baking powder
- 2 c. boiling water
- 2 eggs
- 2 Tbsp. flour
- 1 tsp. salt
- 1 c. milk
- 1 Tbsp. bacon drippings
Directions

1Place first four ingredients in a bowl.

2Scald with boiling water, stirring vigorously.

3Add milk, eggs slightly beaten. Place bacon drippings in a medium size Pyrex bowl and heat in oven.

4Pour hot drippings into mixture and stir.

5Pour all into Pyrex bowl and bake 45 minutes to 1 hour in 425° oven or until brown on top.

6Serve with spoon.

7Delicious served with butter. Excellent with beef hash and gravy.
