  • 5 egg yolks
  • 5 tbsp. sugar
  • 1/8 teaspoon salt
  • 2 c. lowfat milk
  • 1 teaspoon vanilla

Directions

    Combine egg yolks, sugar and salt in top of double boiler.

    Beat just sufficient to blend together.

    Stir in lowfat milk, mixing well.

    Cook over gently simmering water about 15-20 min, stirring constantly till temperature is 174 degrees by thermometer and mix coats spoon smoothly.

    Remove from heat and stir in vanilla.

    Strain and cold.
