- 3 cups brown sugar
- 12 cup water
- 12 cup butter
- 1 cup heavy cream
- 1 cup marshmallow creme
- 13 teaspoon invertase
- 1 teaspoon maple flavoring
- 1 cup finely chopped nuts
- dipping chocolate
Directions

1Cook brown sugar, water, and butter to 215 degrees F.

2Add heavy cream slowly so boiling does not stop.

3Cook to 238 degrees F.

4Pour on slab and let candy cool to warm- lukewarm.

5Work with spatula until cloudy and heavy.

6Add marshmallow, invertase, and maple flavor.

7Continue to work until almost set up and then add nuts.

8Let rest until it is easy to handle, then form into 1 inch balls and dip in melted chocolate.

9Makes about 75 centers.
