- 2 lb. fish
- 2 Tbsp. butter
- 2 tsp. salt
- 1/2 tsp. seasoned salt
- 1/8 tsp. pepper
- 1 1/4 c. milk
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 c. grated Cheddar
- 3 Tbsp. sherry
- paprika
Directions

1Preheat oven to 350°.

2In 1-quart saucepan, melt 2 tablespoons butter; brush over sole.

3Sprinkle with seasoning.

4Roll up each fillet and place seam side down in greased shallow baking pan. Melt milk, 3 tablespoons butter and flour and stir.

5Pour 1/2 cup of mixture over fillets and bake for 25 minutes.

6Melt cheese, sherry and paprika and stir; after baking fish, pour the remaining milk mixture into cheese mixture and pour over fish, broiling until brown.
